here is a cut up "How To" from a while back. It gives you just enough information to be dangerous or at least get you started.

If you can dress a squirrel you can dress a deer. Same basic principle just on a larger scale. As for butchering, if you don't have anyone to show you the ropes, there are some pretty good books on the subject. It's just removing muscle from bone and cutting it into smaller pieces. Don't let it intimidate you.

I harvested my first and only deer last season and did it all myself so if I can do it anybody can. Take your time and enjoy the harvest. A piece of cake really.

Here in KY, the state TV program Kentucky Afield has a step by step DVD, that shows everything from field dressing, to boning out all the meat and leaves the whole skeleton intact, with the sking hanging around the head. When done, you roll up the skeleotn in the skin and dump in the back forty. As I used to be a professional meat cutter, I highly recommend this to get the most out of your deer. I do all my own butchering, me and the wife get about 6 deer every year and I usually butcher 5-6 for friends. PM me if you want the website and how to purhcase. Sam.

Take a look in the "How To" section of this site. There is good instruction with pictures on how to cut up your deer.

The Virginia Department of Game and Inland Fisheries is pleased to announce the release of a new DVD, "A Professional Guide to Field Dressing, Skinning and Butchering White-Tailed Deer."

This video was produced not only for youth and novice hunters who may not feel comfortable tackling the chore of gutting and butchering a deer themselves, but also for more experienced hunters who would like to take their deer processing to a professional level. The video begins with step by step instructions on how to field dress a deer as demonstrated by VDGIF Wildlife Biologist Ron Hughes.

Then, professional butcher and hunter education instructor Rob Bingel (VA Bowbender)  demonstrates the best way to cape out a deer for mounting. The video really gets good when he shows in detail how to de-bone and professionally butcher a deer using only a knife and a hacksaw. Sure, many of us think we know how to process a deer, but seeing the way Rob does it with no wasted effort is well worth the price of the video.

By the end of the video you will learn how to make butterfly chops, de-bone a front shoulder, tie up a roast using a butcher's knot, be able to identify all the proper cuts of meat on a deer, and more! This is one video you will watch over and over! The price is only $12 each.

Please allow approximately 4 weeks for shipping.

Sorry, we cannot ship to addresses outside the United States.

  Price: $12.00
By the way I'm the butcher in the DVD
