Thanks, lads. Mike, thanks again for the beaut armguard! We try to keep the freezer stocked with backstrap and rump. I haven't been making any steaks - buffalo is easy to ruin, especially the big boys - but I make excellent curries and Mexican-style beans-and-buffalo to have with potatoes, nachos or tortillas.

But, with this bloke, I took nothing. He'd been there, dead, for eight hours or so, in 37 degree Celsius heat. What do you reckon? Can any Texans or Southerners tell me if the meat would've been okay? I'm still learning.
