Where can sinew be purchased?  Is it a type of leather?  Maybe purchased from a leather shop or online possibly?

Raptor Archery has it. It is not leather it is made from tendons.

They also sell artificial sinew from 3rivers I believe

Artificial sinew has none of the properties of real sinew. It's basically just string that's dyed a tan color.
