What is the advantage, if any, to using the diamond stones over the regular stones?  Does the knife sharpened come with a case?  I am just assuming that it does.

The course diamond stone will remove material faster than a course regular stone. This is good for getting your blade angle to where you want it. Then you could either finish up with regular stones, going to less course stones as you progress untill you are done and the edge pops hairs off you arm. That's the method I use with my KME knife sharpener.
