I was a meat cutter for 36 years, and this guy is the best I've ever seen.He is "  The Master".

Wow.  I have to get me one of those captain hook tools.  That must be the reason I am slower :-)

Besides the speed a couple things that haven't been mentioned...

I was surprised he took the front legs off like that.

I have never seen meat come off the bone that easy.

I have never seen joints come out that easy.

I guess there is a way to do it, and THE way to do it.

I need to invite him to deer camp.My uncle has been a butcher over 45 years.Don't know if he's that fast but he can gitterdone.I still remember him trying to teach me as a youngster and i would be left in awe.I need slow motion.It takes a bunch of dead animals to get that good.

I bought a couple meat hooks after watching this for he first time last year. Makes a big difference. If you can read the earliest comments he mentions the name of the knife he uses.

Took my own knife to the leg last yr, pulling just as he was (no where near that fast). Was able to "control" the depth of my stab wound, thankfully, but would have/should have been straight femoral. I would have been in a bad way.

That is a COOL video! I have no thtat need for speed bu cool ideas on breaking one down.

He says.... (I use a forschner 40017. It is a 6 inch boning knife. I use a smooth steel often (a few swipes about every 5 minutes of cutting). This seems to keep it sharp better than the common house hold steel which is quite rough)
went back through the comments to find that.
Also says he is working on a ...slower, step by step talking his way through it. That would be a good one too.

Wow!, what a pro, but I thought he got awfully close to an "accident" a couple of times. Good lesson.
