Congrats.  Great story.

Regarding cooking, I am big fine of brining (go to allrecipes.com) and pick out one you like.  Then cook it indirectly on a charcoal grill till done.  The way you cut it up, about one and half hours would be my guess.   Enjoy.  And let us know how it came out.
