I'm glad you had success but if it were me, or my wife (who has done it, as well) and there are that many coydogs out and about there would have been a number of those critters thinned out with a shotgun by this time.  
Every so often a couple need to be killed so the rest of the pack remembers their better manners.  First coyote I ever shot at was fixing to have my beagle for breakfast.  I know what it is like to come close to loosing your best friend.

Nice job!

You don't have to remove any cartilage from the ears. While skinning it out cased, when you get down to the ears, just cut the ears off of the skull area as close to the head as possible and this will insure that the ears stand up well and full after drying.
