I just dont know,,,,, for mostly re-sewing leather items like sheaths and bow quivers with just a heavy threaded needle.... 50/75/100#  im not sure the thickness's so which one should i buy.

I've used 20lb test spider wire fishing line for leather repairs with no issues. Having said that, I have artificial sinew, which looks more gooder, but no clue what weight.  I think it might be a question of appearance, in terms of the width of the sinew, and getting it through a needle and leather vs the weight rating?

I use the 100# and if it's to wide I just spilt it in half it's easy to do.

Artificial sinew is basically waxed polyester. It works well for stitching and most weights of it will work fine. The only thing I don't like about it is after use the wax comes off. It doesn't effect the strength but it doesn't look good then, IMO. For leather stitching I use leather sewing thread. It is also waxed polyester or similar but it is twisted or braided and holds it's shape. You can get it on Amazon for about $6 a spool and it comes in many different colors. I prefer the 1mm thread for my leather stitching. You will have to look for it. It seems most is .85mm and in my opinion it is too small for my liking.
