I have a 64" recurve that is 56x29.5".  I pull to 31.5". Should I have a shorter brace height or a higher brace height, so I don't stress out my limbs?  Or it doesn't matter?

If you know the model of the bow I would try to contact the bowyer to see what they reccomend.

The brace height is not related to how far you draw the bow.

Has anyone ever tried to put together a brace height list?

A higher brace height may move the stack point back...why not brace it high when you have that long a power stroke
I set out a while ago to reduce my herd of 40 bows...And I am finally down to 42
