What brace height is recommended for a Big Jim buffalo longbow ?

Not yet, figured he might be busy getting ready for Denton. I'm sure there are a few Buffalo shooters out there might help.

7 1/4  to 81/4  I shoot my buffalo at 73/4.

7 3/4 will get you real close. You may need to fine tune up or down slightly from there to make sure you get it quiet. They're great bows.
