Thought i had a very good grasp on all aspects of butchering(and i still may) but his speed and efficiency is something to behold. Im more like a tractor to his ferrari! Awesome to see!! Thanks again!!

I gotta say he kinda makes me nervous the way he handles that knife (frequently cutting aggressively towards himself), but he definitely gets the job done efficiently.

Handy to know if you're getting paid by the deer. Fortunately I'm not so I take my time.

There's a video on youtube somewhere of a guy who skins and field dresses a deer in 2 minutes, and cleanly.  Amazing.

Would be awesome to have a local guy like that who knows butchering that well. All the processors around me haven't a clue how to process meat, much less how to be that efficient.

He's the fastest I've ever seen breaking down anything. He does break one fundamental rule of meat cutting..don't pull the blade back towards your body when cutting.

If the blade slips over a bone or whatever, you could stab yourself. It happed to a guy I knew that cut meat for a grocery store. Stabbed himself in the stomach.

I just wana know what knife he uses and how he sharpens it. That thing was still shaaaarp at the end when he was removing silver skin.

I believe that knife is a Victorinox.  Nice butcher knives.  You can usually find them at very reasonable prices too.

Being a butcher in a past life, Ive seen this done a time or two, but that is the best I've ever seen.  Sometimes the best break tradition.  

Ive never seen someone remove the brisket/rib/neck/loin meat at the same time that way!  going to have to give that a go this year.  all in one big slab, and cleanly too.  Thanks for the video.

Good info on the breakdown of the muscles. Especially the way he removes the loins. Gonna save this one.

I bet he has done that a time or twelve!  It takes me over an hour and I don't get no where near as much meat off as he does in 8 minutes!!
