It took me about 10 hours from hanging deer to cut, ground and fully packaged and in the freezer.

Looks like this guy could use me as a friend    ;)

Amazing! I hope he's on piece rate rather than hourly pay  :jumper:

I watched it a couple times,I admire the speed in which he does it, although Im not usre about some of the cuts. I guess I'll assume he trims a lot of the them up afterwards. At least I would hope so.

I've never seen shoulders broken down in that fashion, that was interesting ,as well has how he rmoved the backstraps. I prefer to take a bit more time and trim as I go. I'd like to see some of his other videos he said hes going to do in the comments section.
...stood alone on a montaintop, starin out at a great divide, I could go east, I could go West, it was all up to me to decide, just then I saw a young hawk flyin and my soul began to rise......

wow...........thats crazy.... I'm ever scared to watch him hold that knife......
FREEDOM IS NOT FREE

For him it probably is not even worth getting dirty for one deer, he would need 10 or 20 at a time. :)  That is FAST!!

Well I went & order me one of the fancy boning hooks. I don't have any expectations of ever being as fast as this guy but I do see it as a valuable tool. Not only for boning but skinning.

Bad guys better not try and mug this fella while he has that blade handy!

He is amazing the way he handles that knife.  I've watched this several times and showed it to everyone close to me that likes hunting.

Where did you order that boning hook bro? I GOTTA have me one of those.     .... i don't know about the rest of you guys but i picked up a few moves I'm going to try on my next deer.... working the rib cage from the bottom up was slick!

i think that ol' boy has done that a few times. I'm happy with two hours ready for butcher paper.

My elk go to the butcher shop in one piece or quartered. i like the steaks and roasts cut with the bone in my elk meat.

BigJim

It took longer for my computer to load that than it did for him to cut it.

My problem is that when ever I'm fortunate enough to go through the motions, it's either on the ground, in the dark, freezing, or all three.

Still not too fast. Got to apreciate a man who is good at what he does.

That was neat to watch, I actually learned that I use to waste some meat when I would cut a deer up. That guy knows what he is doing!

Burnsie

The Forschner 40017 boning knife he was using can be had for $20-30 all over the internet.  Even saw one one sale for $19.  I figured he used some professional high end expensive knife.  I might pick me up one of those, I'm sure the knife will improve my butchering skills 100%, just like every new bow I buy is going to make me a dead eye shot.

It was the cheapest on that big auction site $18.10 shipped. But if you search boning hook there are several places that sell them. It will also bring up womens lingerie if you are into that kind of thing   :biglaugh:  They sell one that is 5 1/2" & one that is 4". I went with the 4".

I can't get over the fact that he never had to sharpen that knife
