I would say judging by the number of meat hooks hanging behind him, that ain't his first rodeo. That was a sweet job. There was a place down in Ehrhardt S.C. that used to process cows and hogs if you wanted and they were nearly that fast. I saw them put a cow down with a .22 and they skinned it so fast the hide was still twitching when it hit the floor.

The quest to improve is so focused on a few design aspects & compensating for hunter ineptness as to actually have reduced a bow & arrow's effectiveness. Nothing better demonstrates this than mech. BHs & speed fixated designs

That guys pretty quick It took me 75 minutes to bone out my elk this year in the field. It always cracks me up how guys do that on a table. I never shoot anything close to the truck. Packed two elk this year one 3miles and one 4. we debone in the field

He is very adept with his knife but the draw strokes toward his abdomen and groin and thigh are best avoided by most of us.

Every profession has it's superstars. He's one of them, got it down to a science. Lessons can be learned, though. Happy to hear the comments about how long it takes others. I'm mega slow, but one or two a year makes for a refresher course each time. Still plan on doing it though, feels good to see the thing all the way through.

That is impressive.  I need to find a hook like that that folds down for use in the field.

Will be studing this video for use on elk and moose in the future.

That's amazing...I need start using a fillet knife like that.

I was surprised at how he took everything around the backstraps off the ribcage, and then took the straps out.  Anyone else do it like that?  I usually just extract just the backstraps themselves, and leave the other stuff on there.

Seriously though, I was reading the comments below the video and he said he uses a smooth steel to sharpen.

I was amazed at how sharp the knife was and how it stayed that way throughout the process.

I couldn't get a good look at the hook due to my antiquated puter, but from what I did see, it looks very much like an ice skating hook, the one you would use for making your laces tighter, but it would have to be sharpened. I never saw one that would fold down but one could just put a cork on the sharp end when not in use.
