Bacon Wrapped Backstraps & Ewe Stew

Just prepared some bacon wrapped wild sheep for Mother's Day lunch.  Harvested this ewe a few weeks back!

 

Ready for the grill!

Wild sheep backstrap no less!  You ARE killin' us!!!  I hope the rest of the diners appreciated how special that meal was (maybe by nodding their heads between bites)!

Thanks for the kind words guys!  It turned out great.  I sliced the backstrap into 1" pcs.  Seasoned it with garlic salt and pepper.  Then I wrapped it with the bacon.  I finished it with a slice of onion on each side held together with a toothpick.

Just finished preparing the rest of the sheep.  Threw it in the slow cooker for 8 hours with a bunch of herbs and veggies.

Wild Sheep Roast! It's what's for dinner!

Another variation is to take jalapeño and char them well on the grill.

Then when well charred remove the seeds and much of the charred skin.  

I use peperjack, cheddar or Colby, and cream cheese to out in the jalapeño and set aside.

Then take the meat and cut into strips and beat to the thickness of a piece of bacon.  Wrap the jalapeño in the meat, then Wrap the meat in bacon and secure as many as you can fit on waterlogged skewers.

I wrap the bacon so it totally wraps the meat and jalapeño so any melted cheese stays in.

It is smack yo mama good, so we rarely eat on mothers day!  Good stuff for sure...
Give me a bow a topo and two weeks, and I guarantee I kill two weeks!

Rob....LOL!  :thumbsup:  I need to try that! Sounds delish!  Yup, can't serve that on momma's day if it's that good, my momma smacks back twice as hard! I just used the rest of my sheep.  Hopefully, I can harvest another one on my next trip!

It is great, but the keys are the wild game and bacon!!!

I am a Joja boy and real spicy wears me out, charring the jalapeño and removing the seeds makes them less hot, and more flavor if that makes sense.

The cream cheese cools it down a good bit, but a few cold beverages on standby are always a good idea.

By the way, my momma hits back with a hammer!
Give me a bow a topo and two weeks, and I guarantee I kill two weeks!
