I have a 45@28 Bear Grizzly and I'm looking to shoot carbon arrows out of her, I'm thinking of 30 inch arrow with 500 spine and 125 grains up front. What shaft do you recommend

Like Killy said, your draw length will make a difference. I would guess you may need more weight than 125gr on the end.
I would think you will need more than 125 on the front also. And/Or drop down to 600 spine arrows.
This is assuming you don't have an extremely long draw length.
An Easton Axis .500s will work fine. Ultra small diameter holds the center of the arrow closer to the shelf to help the bow accommodate a little more spine and the skinny shaft increases penetration. Can front load the end to tune the arrow to the bow.
In fact, will want to front load it some with a 50-100 grain brass insert to give the arrow some weight. A 50 grain insert, 20 grain aluminum adaptor and 125 grain point will give you an arrow in the 480 grain range, just about perfect for your set up IMO.

We need to know your draw, but for typical draw lengths at 45# a .600 is "da bomb" with something around 175 to 200 grain points. I believe the Grizzly is cut to center, not past, so .500's will likely be quite stiff unless you have a very long draw or want to use very heavy points.
Carbon Express has two .600's that work well for trad bows, the value priced Predator II's or the fancier Heritage line. I have long favored Carbon Express for carbons, their spine tolerances and straightness is usually excellent and often rivals or beats competitors shafts that cost much more. JMO.

I draw 26 1/2", I shoot full length 1535's with 175gr field points. I also shoot them cut down to 28" with 3 x 4" feathers 50gr brass insert, 100gr broadhead screw on adapter and 160gr Grizzly right beveled BH. For me they shoot fine from 45# to 53# recurves or long bows.
Naturally,the arrow choice depends on which bow I shoot

Goldtip 15/35 vs axis traditional arrows
I been shooting axis 600 spine, but there not cheap.
Think of gt bless, but I shot 41lbs and like all the penetration I can get.
So will the smaller axis out penetrate the goldtips?
They are both great arrows ( GT vs. Axis). Personally won't spend the money on the Easton shafts, but if you only use a dz every year or two, what's another $40-$70.
I sell both and can't say that one has any more advantage than the other except price.
1535's or .600s for the first question. The Grizzly is not cut to center and is not fast flite compatible. At 27" draw the bow is aprox. 42-43lbs (you could add up to 3 lbs for Bears weight bracketing..or remove 2 lbs).
Full length arrow with 145g point will put you around 9.4g of arrow weight per lb of bow weight (estimated). That should be real close.

Out of my 47ib palmer I shoot GT 1535's cut to 28" with 125gr points. I would think the GT 35/55 cut to 30" might work.
I shoot CE Heritage 150's with a 50gr insert and 160gr's up front cut to 28". I would think if you cut them at 30" you might be able to use the 50gr insert and get the broad head down to 125gr.
