I am shooting a 51 lb recurve at 28 and I draw to 28 I am shooting the axis traditional 500 with 190 grain tip at 31 inches. I am getting pretty good flight, but the easton chart says I need to be shooting the 340s. for those shooting these shafts would you think the 340 or the 400 would tune better. I am set on my broadheads and they are 190 gr and the easton inserts are 75 grains. I am also considering a 54# Toelke whip with the high speed limbs and would like to shoot the same arrows out of both.

Easton charts are nutoriously stiff...you are right in the ballpark imo.

I would obtain a 400 to try out. Cut to 31 with the aluminum insert(16 grains) and your 190 grain head. The Gpi on the 400s are more and will help make up for the loss of the brass.
My guess the 400 would be better for that poundage. Wouldn't hurt to by a single of each spine to test it out ..
I'm shooting a Samick Sage Recurve 59# @ 27.5", 29" black shaft axis 400s, with 75 gr. inserts and 100 gr point, 5" shield feathers. The chart says 340s for me too. Mine fly good. Hope that helps.

I shoot easton excels cut to 30.5" and use 400s with 5" fletching, 18 gr inserts, and 175-225 gr heads. Lately I'm shooting the 225s, but the175s fly well, also.
These are out of my two Toelke Whips....both about 50@29.
I use the 500 shooting 47# cut to 27" with 75gr brass insert and 175 gr field point. 150gr broadheads and they fly like darts. I think your set up is weak.
Just listing your set up, I would have suggested 400's also but would not be afraid of 340's.
Curious thread! I just got a 51# bow and currently shot a 54#. I've been shooting 400 with 100 grain insert and 150 bh and they fly great. I'm curious to see if these will fly out of my 51#. Like you I would also like to use same arrows for both bows.
I've have not shot the new traditional ones and my 400 are the older axis

Should be the same except for a little more weight.
I use 400's out of my 47# at 26" hunter bow hybrid longbow. I draw 27.5" so around 52# im guessing.
had to go down to the 50gr insert and 145gr tip and chop them down a little to get them to tune. but best way to know if to try. lancaster I believe sells there bareshafts
400's will work. I have 500's, 400's and 340's w/similar weight bow, 30" arrows. You do have a long draw though, try some 340's if you get a chance, everyone's technique & setup is different. I do like the 400's though, they seem to perform well over a broad range of bow weights and varying FoC's. I'm not as enamored with my 340's yet but admit I do not need the spine they possess even with EFoC (400 grns. + up front).

You list the bow your shooting is 51#@28" & your drawing the bow 28" with a 500 Axis cut 31" 75gr insert 190gr head.
I would think your real close & if anything you might be able to cut the 500's down a 1/4" at a time until they bare shafts perfect for you, as you have a good 2" of arrow to spare at your 28" draw length. Remember 1" cut off a carbon shaft can make a big change in arrow spine so cut with caution.
I think you'll find 400's to be to stiff with the 190gr point weight you wish to use, maybe 400's would be the ticket if you had a longer draw length like 30"31" but not at 28" & 340's WAY stiff for 51#@28"
Give a bare shaft a try & see what it tells you, a bare shaft never lies.
