I prefer unpressured hogs myself.  They're less nocturnal than the other species, pressured hogs.

Almost all the hog in the us are just the garden variety feral hogs. If you are a trophy hunter and looking for a wall trophy there are hunting ranches the have true Russian boars but it will cost you a shiny pinny to hunt those.

As to taste. Hogs are armnevores (spelling, they eat plants and meat) and eat any thing from farm land grain to other dead animals even themselves. Some say the small one eat best as a rule this is true but if you were to kill a 275 lb bore that has lived on flat ground and eaten farmers corn and grain all its life you would have a very good tasting hog, by contrast you could kill a 125lb sow that lives in steep mountains and eats trash and dead animals and she will be tuff and nasty tasting.

The pigs I like to shoot are from 100 to 150 pounds, why, because i can drag them myself to the closest road. Its just me and the wife at home and i dont need a huge hog. With that said i will take the first shot opportunity i get.

One more thing it doesn't much matter what kind, they are just plain fun to hunt, i love it.

Where do you plan on going. Texas has the most. California is very good to but it will cost you. We like our hogs here, i think an out of state hog tag is 68$ and change for one tag and you would hunt a privet ranch, the going rate is 500 (simi to non guided) to a 1000 for a fully guided.

I like hogs under 100 lbs. 10 yards away. The ones we have on the ranch(Florida) are feral hogs and come in a wide variety of color phases and range in size from footballs to 300 lbs. Some have a distinct razorback(raised hair along their spine).
The boars have cutters up to 3".

In my experience, the hardest ones to hunt have been hunted with dogs and or shot at with rifles at night(most ranchers hate them).
We only hunt(bow-only) them two weekends a month, so they readily come to the feeders morning and evening and sometimes mid-day.October has been tough though because the acorns are falling like rain. A hog will walk by a pile of corn to get to an acorn here.
I think spot and stalk is the most exciting way to hunt them but sitting over a feeder is fun and generally more productive(and not as easy as some think).Good luck.

I don't like shooting them 300+ pound boar hogs.  They'll keep you in sausage for the next ten years.  50 to 100 pound sow for me.
