No moss grows upon this man!!!

Thought i had a very good grasp on all aspects of butchering(and i still may) but his speed and efficiency is something to behold. Im more like a tractor to his ferrari! Awesome to see!! Thanks again!!
Nathan
I gotta say he kinda makes me nervous the way he handles that knife (frequently cutting aggressively towards himself), but he definitely gets the job done efficiently.
The use of the meat hook to keep his left hand away from the knife is interesting to watch.
I believe that guy might have done that once or twice before.
Handy to know if you're getting paid by the deer. Fortunately I'm not so I take my time.
There's a video on youtube somewhere of a guy who skins and field dresses a deer in 2 minutes, and cleanly. Amazing.
Would be awesome to have a local guy like that who knows butchering that well. All the processors around me haven't a clue how to process meat, much less how to be that efficient.
Cool video. Now thats fast.I not in that much of a hurry and want to make sure i keep my fingers to be able to shoot more deer
He's the fastest I've ever seen breaking down anything. He does break one fundamental rule of meat cutting..don't pull the blade back towards your body when cutting.
If the blade slips over a bone or whatever, you could stab yourself. It happed to a guy I knew that cut meat for a grocery store. Stabbed himself in the stomach.
I just wana know what knife he uses and how he sharpens it. That thing was still shaaaarp at the end when he was removing silver skin.
I'm with TxAg , what knife was that holy smokes. Need one of those hooks also
I believe that knife is a Victorinox. Nice butcher knives. You can usually find them at very reasonable prices too.
Holy Smokes! that guy is fast.
impressive
Being a butcher in a past life, Ive seen this done a time or two, but that is the best I've ever seen. Sometimes the best break tradition.
Ive never seen someone remove the brisket/rib/neck/loin meat at the same time that way! going to have to give that a go this year. all in one big slab, and cleanly too. Thanks for the video.
Wow!
Good info on the breakdown of the muscles. Especially the way he removes the loins. Gonna save this one.
I bet he has done that a time or twelve! It takes me over an hour and I don't get no where near as much meat off as he does in 8 minutes!!
I was a meat cutter for 36 years, and this guy is the best I've ever seen.He is " The Master".
Wow. I have to get me one of those captain hook tools. That must be the reason I am slower :-)
Besides the speed a couple things that haven't been mentioned...
I was surprised he took the front legs off like that.
I have never seen meat come off the bone that easy.
I have never seen joints come out that easy.
I guess there is a way to do it, and THE way to do it.
Amazing.
I need to invite him to deer camp.My uncle has been a butcher over 45 years.Don't know if he's that fast but he can gitterdone.I still remember him trying to teach me as a youngster and i would be left in awe.I need slow motion. It takes a bunch of dead animals to get that good.
I bought a couple meat hooks after watching this for he first time last year. Makes a big difference. If you can read the earliest comments he mentions the name of the knife he uses.
Wow...I have never seen anything like that....and now I'm ashamed at how poorly I do it...
Wonder how long it takes him to do an Elk?
Took my own knife to the leg last yr, pulling just as he was (no where near that fast). Was able to "control" the depth of my stab wound, thankfully, but would have/should have been straight femoral. I would have been in a bad way.
That is a COOL video! I have no thtat need for speed bu cool ideas on breaking one down.
J
I'm impressed!
Wow...that was cool.
I'd just like to be able to dis-assemble one like that, dont care if it takes 8 hrs.
Bet he's got a few under his belt!
Eric
Guy makes me think about trying to butcher my own this year....
ooooooh. i would need stiches if i tried that. that guy sure makes it look easy.
He says.... (I use a forschner 40017. It is a 6 inch boning knife. I use a smooth steel often (a few swipes about every 5 minutes of cutting). This seems to keep it sharp better than the common house hold steel which is quite rough)
went back through the comments to find that.
Also says he is working on a ...slower, step by step talking his way through it. That would be a good one too.
Wow!, what a pro, but I thought he got awfully close to an "accident" a couple of times. Good lesson.
