How much offset / twist should your feathers have? Pictures from nock end would really help too...I shoot 3 fletch 5 inch feathers
To be honest as much as the jig will let you have. Check out the woodie love thread a few threads down from this.You will see plenty of examples.
I also shoot 3, 5" feathers although my feathers are parabolic shaped.
I have a helical Jo-Jan Multi-Fletcher. If I'm not mistaken, I think it wraps/puts eleven degrees of helical twist.

The closer you can bareshaft your arrows the less helical you will need. On tuned arrows I use smaller feathers and slight helicals. Extreme helicals stabilize faster but you lose speed. It will let you get away with a less than tuned arrows if you are having difficulty though. I'll take the extra speed myself.
But big feathers look so sweet on wood! I shoot 3 5 1/2 with med helical. They get there quick enough for me.
My JoJan is a straight fletch. I usually offset the fletching either right or left depending on the feathers. Even a straight fletched feather without offset will spin the shaft just because of the texture of the feathers. With a little offset they spin enough to stabilize the arrow without adding too much resistance.
