If your bow is pulling 55# @ 28" then it will be pulling around 61 pounds at your draw length. I would think a 340 cut to around 31" with a 100 grain brass insert and 150 to 175 grain point would be close. I do all my tuning at around 15 yards. I highly recommend using O.L. Adcock's method of tuning as it will always get you tuned.
my bows pulling 50 at 28 my draw is 30
the sage is cut 3/16" past center , so it likes a stiff arrow. If you are hitting right your arrows are probably too weak try using a thicker side plate.
I shoot a 50@28 Sage. My draw length is 29#. I shoot full length .400 Easton arrows with 200 grain field points or 190gr broadheads.
These fly true as long as I keep up my side. My bow shoots .340's and .300's with the same 200gr points just as well, but tends to be less forgiving with the stiffer spines.
If I were you, I'd try a .340 or even a .300 spine with a 200 grain point.
