Saddlecloth is a synthetic fabric, pretty warm and windpoof but it has several drawbacks: it doesn't breathe, and it gets really stiff in cold weather. Hardly see it anymore. If you want a synthetic that has all the good and none of the bad, I would suggest Wolfskin, available from Gray Wolf Woolens.

I have a saddleclothe jacket and pants that are about 12 years old. The pants are my favorite hunting pants. No burrs and durable. It does get noisy in really cold temps. It is a laminated material and one of the laminates gets stiff. I love the stuff.

I have a pair of pants, very durable, its almost like a very fine brushed fleece (micro fleece) outside with a fine denim like inside, I love mine.  The ones I have are skyline camo made by Westark USA.  great bush pant were you might run into burrs, briars and sharp pokey sticks that might ripe other fabrics.  mine are ok in the wet and by buying a little looser will breath. only draw back i could see if they are to tight they might chafe.

I have an older storm jacket made of saddlecloth.  It will keep me warm and dry while sitting but if I walk around at all it gets like it has been raining on the inside.  It just doesn't breathe at all.  I do normally get pretty heated while walking so it might be more of an individual thing.  I usually have to remove any hat I wear if walking any length of time.

x2.  And x20 on the NO BURRS.  I have never found a better burr-less material.  Sad you cannot find it anymore.

I prefer the Bucksuede offered by Day One over their Saddle Cloth.

I have pants and jacket in saddle cloth, very comfy and I have never noticed that it gets noisy in the cold, they are both in apparition camo.

I was wearing the saddle cloth in about 15 degrees, maybe colder and after about an hour it was noisy. I have wool to hunt in when it gets that cold now. I am going to look into Gamehide and the Wolfskin for another pair of pants. These saddle pants have had almost every seam replaced. just dont wanna give em up.
