Let me give you a big ol' Texas salute! I raise my glass and my smoked javi is your honor. I might even wash that javi down with a mesquite crispy shrimp and an adult bubbly beverage.

Ted's javi now has only two legs. He and Jess are out hunting while I cooked dinner.Shhhhhhhh, I'm not telling him till after we eat. I bet he doesn't check his cooler for awhile. HeeeHeeee! CK

gotta disagree 'bout the javi. I'll eat the shrimp al day long but just can't get over the javis smell. like skunk pee and fox pee mixed, one rank smell

I've eatin a bunch of javi and can't say I ever had a bad one. Curtis cooks a mean javi, too!

Alls I can say is DON'T EVEN get between JC and I when Curtis puts the   "JAVIE SALAD" on the table.

These guys stink when the hide is on them but once over mesquite coals they turn into a fine dinner.

Ted and Jesse went coon hunting last night behind the house. There was also a fair chance to run into a hog. No reports this morning yet. Looks like the lights are still out in the bus.

We'll be cooking javi salad later today. I'll do a pictoral so everyone will know ho to fix their own. Be well Gang! CK

Dang Curtis, that looks awesome!!! I have never shot a javi before but have a real hankering to do that. Eating wild game, drinking mexican beer and smoking cigars on the other hand I have lots of experience at!  One of these days I am just going to have to sign up for one of your adventures down there in Texas.

Did sumbody say "Javie Salad"!!??!! My mouth is watering and my stomach is rumbling just looking at that picture. I'll not forget the tounge-lashing I received after I cleaned out the bowl at a Texas Sweat and someone went to get more..."You ate ALLL of it? Heck, there had to have been a pound left!" I can say with 100% conviction that there wasn't quite a pound.

For heaven's sake, please don't show a plate of smoked javelina sausage...please...please!  :saywhat:

I'm guessing Javi could vary alot on how you prepare it, but I'm willing to bet that Curtis could make a dead skunk taste pretty good.  After Curtis gets done marinating and turning it over some mesquite for several hours it all taste wonderful.

This is JC demonstrating the proper technique and form for attacking a large bowl of javi salad. Notice the firm grip on the pack of crackers, eye's focused dead ahead, non-swaying in his diligent quest to find the bottom of the bowl.

Oh man , I can honestly say that the best part of hunting Hogs and Javelina with Curtis is the friendship but followed not far with the food .
That meal in the first photo was awesome, Curtis knows his BBQ. Then , the Javi salad for the next couple of days , oh man Vance I thought of you often as we were chowing down.

Good to see you made it home safe Ted. I was actually eating a javi salad sandwich earlier today when I posted the pic of JC. I was thinking about all the cool friends that I've been so fortunate to have shared camp, stories, hunts,  and salad  with. I have some tremendous memories in a bunch of guys who posted here. Yeah , we made it home in one piece Curtis, Jesse hasnt stopped talking about his adventure , thanks for being instrumental in that. Man I think I would turn nocturnal if I lived down there , sleep all day , hunt hogs at night , that had to be one of the highlights of my life, those woods came alive after dark. Wish we could have made a bigger dent in the hog population for the rach owner , but hey we will just have to come back.
