OK folks,
Since we've determined that the 3/8" Yellow Heart that I've been using is too thin, does anyone see any problem with glueing two 3/8" pieces together then planing it down to 5/8" and using that as my belly wood - then glued to a bamboo backing?

I see no problem unless you have a stronger piece to use as the belly. You don't have to reduce it be after the glue up, just start tillering after the backing is added.

I would glue all 3 pieces at once.

Yep, now that I think of it I would too. It would be easier to glue in the shape you desire.
