If I may ask a question were the lights wired direct to controller?

I use 2 -600w dimmer switches. I then have a digital BBQ thermometer the goes into my form and the readout sits on top of my hot box. I now have markings on my dimmer switches for different tempatures .

Do you still use a 180 degree "snap disk" when you use a controller or dimmer system?

In the old days when I was still working a controller like that didn't have enough current capacity to handle much of a load.
A relay was used in between.

Mark, I wasn't clear..can you put a snap disk in the oven box to shut off power to lights in case of controller failure? The snap disk would be a emergency shut off in case of temps over 180 degrees.

Mark, get a Ranco ETC Temperature Control w/ Sensor.  They are about $55..I think I got mine on the auction site a few years ago.

A snap disc is always a good safety as well.

I use a RANCO as well. Works great.

I was asking because I bought a similar unit.  I consulted by engineer friend he suggested a relay because "although a controller may be rated for 10A they are not really designed for direct load".  I built mine with a relay hoping I can avoid a similar circumstance.  Sorry to hear about the failure.

Details in the following thread.
