Cocobolo doesn't need a finish.  It is very oily, and buffs out pretty by itself.

Epoxy finishes will hold on it if you feel you need a finish. Ive used T-bird or fullerplast on bows with cocobolo.

Cocobolo is so oily that a lot of finishes won't even dry on it.  I clean it with denatured alcohol and seal it with thin super glue.  Now you can leave it that way or finish it as you like.  But like Dan said you don't need to finish it...tippit
