Title: racoon recipies

Could have gotten a racoon today while rabbit hunting  but didn't  because  I don't know the best way to fix it. I would like some good recipies to try the next time I have another chance.

I prefer the small ones not over 5 lbs. Skin, quarter and throw in the crock pot with your favorite BBQ sauce. Cook slow for at least 2 hours, more if larger 'coon.

quartered and tossed in a crock pot is the way to go, yoiu can experiment with different sauces, onion soup mix, beer, or whatever. the key is cook it long enough, 2 hours at a minimum, I prefer 4-6. the bigger the cooon the longer you cook it.

I'll only eat coons no bigger than a cat. My favorite way is grill them first over a smokey low fire for a few hours then cut them up and put in the slow cooker for another 4 hours.  Make sure ALL the fat is off a small coon, rub it good with  dry ranch dressing pouch you can buy mixed with olive oil and salt and pepper.  I have tripod camp grill and I lay that coon belly down, legs spread about 2 feet above the fire and put a big turkey roasting pan over the it to help cook, smoke and keep it from drying out. Check it now and then to be sure it's not drying out and baste if need be. After a few hours it's going to taste good but be tough. You can wrap it in foil and slow cook in the oven or I like to chop it up and put it in the slow cooker and add a bit of water.  At that point you can add veggies like a pot roast or BBQ sauce but it's going to be tasty anyways.

Fried, grilled, or crock pot....all good ways to cook a young coon. With bigger/older ones, I cut the meat off the bone, remove all the fat and tendons, cut into strips or small chunks and fry 'em.

I run a 75% coon trapline and I process all my meat through the grinder and into Coon Burger Patties. Into the bowl from the grinder, add a little Worcesterchire sauce (forgive my spelling) and seasoning. mix all together, and I package it as patties and into the freezer. best to cook it over an open flame in order to lick that grease up as it drops and pulls more grease out...
