How many guys make their own deer sausage?
Do you use the 3lb casings or does any make it with the snack stick casings?
I would like to find a recipie and make my own using the bratwurst casings and cook it in my smoker.
Any suggestions?

Tim go look up The Sausage Maker on line they have and sell everything you would need for makind sausage. I use 3/4 sheep casings and 2 1/2 by 12" clear casings for summer. This place has DVDS BOOKS and the lot. Good Luck Don
