Stopped at a friend's uncle's house last night, and he mentioned that he had a groundhog that was tearing up his yard in the back. Then he told me he had eaten groundhog and it was good. I hadn't heard of that. Anybody eat these? Got any groundhog recipes? Make ground chuck out of a woodchuck?

I've eaten a lot of them. A young wook chuck is just like a big squirrel. Cook him the same as you would a squirrel, brown, cover and fry. An older chuck goes good in a stew or pie. Crock pot or pot roast is the best way for a tough old wood chuck.

They also are good cokked in a smoker with apple wood. Young ones are definetly better eating but for older ones I recomend marinating them over night in a marinade that has some sort of acidic juice like lemon or lime. These will break down the fibers in the meat and make it much easier to chew. One last hint if you shoot it with your bow and it goes down its hole do not reach down to retreive it unless you know it is dead groudhogs have extremly sharp teeth and from experience they hurt when they bite. Tom, I've eaten em...young uns are real good, old boars, as expected, are tough unless you parboil em good before cookin. Make sure you remove the scent glands under the forelegs and small of back or it won't be fit to eat no matter how young it is. Clean em quick and soak in icy lightly salted water for a few hours helps too. My granny's favorite way to cook em was brown em in bacon grease, salt & pepper & garlic, and then throw in onions, mushrooms, carrots (stew vegetables), about a 1/2 cup of mountain dew, cover and simmer. Shore was good! Bout any squirrel or rabbit recipe will work though.

I've eaten one that weighed 23# on my grandma's bathroom scales... dunno what the real weight was, but I had to rest draggin it home a bunch and I was never a small kid! :bigsmyl: (maybe not meat hook size, but not small!) :)
When I skinned it, there was a 5qt. saucepan full of fat that fell off! :eek:
Our family receipe: par-boil low for 20 min in onion, parsley, salt and pepper. Bread (homemade shake-n-bake) and bake in oven for 30 min till crunchy! Or use as Ron does in caseroles...
CAUTION: I learnd on the big'uns...there is this grey, gnobby fatty lookin "thing" under each armpit and between the shoulder blades and the spine... 6 in total. They're some kinda scent gland or sumpin...makes yer hands smell awful, but trust me, it's best to cut em off afore you cook it! Honest! :bigsmyl:

Agree with Ron....young chucks eat great. Growing up Italian we usually ate anything we got our hands on. Mom would brown them, they throw them into spaghetti sauce, simmering the sauce for a couple hours. Some good eating here....

Hardier and more filling than chicken, without the steriods and such. Plus, its kinda funny to put a little on a sandwich and give it to your friends. Even funnier when ya tell them whats in it.

never have tried groundhog we don;t have them out here,but bush hogs are tasty if young and done slowly in a camp oven/ huntress

I tried one old boar chuck. Wish I'd have known about those horrible stinking glands before I put it in a crock pot.

I`ve put young and old groundhogs in a crock pot on low for about 7 hours.With potatoes,baby carrots,celery,onions,salt&peper.The one time i cut up about 4 hotdogs and a tomato.The meat just about fell off the bones in both stews.Turned out realy good.

wish i would have read this earlier I had one milling around in front of my stand earlier this year. squirrel is one of my faves so a bigger squirrel is sounding purty good. :)

Now how about groundhog sausage ? I know folks make pheasant,rabbit even squirrel sausage.Yeah it takes alot of 'em to make it or just add a bunch of extra pork.LOL.

Yep, Daryl Garber fixed some up one time in a stew. Called it short legged beef stew. He told me it was groundhog after I finished the 1st bowl. I went and got seconds. I thought it was Good. I wouldnt recommend trying that with your wife or girlfriend though, they don't forget stuff like that.. LOL

just talking about this(weird) only tried one, my dad par boiled it then fried it, excellant!

What realy goes good with ground hog no matter how you cook it is dandelion salad. Pick the leaves before the plant blooms, use some oil and vingar and you'll be going back for seconds.

You have to watch out if they are near where wild green onions are available for feeding, as this will give a strong bitter onion taste to them.

chucks are my favorite game to go after during the summer and iv always thought the smaller ones hav tasted just like squirrel.
