Well I can type up a story :)
I got invited by a new friend to go bow fishing near Cocodrie La. We put the boat in right at dark and rode for about 45 minutes. We found some clear water and starting easing along the bank of a lake. We hadn't gone far when my friend shoots and misses something and as it was going under the boat I swung drew and released really quick. The boat was still going forward so I thought I had missed. I grabbed my line to pull my arrow out the mud to reel it back in and the line took off burning the heck out of my fingers as the line went peeling out!
I hollered "I Got Him"!!!! My friend yelled let him run don't pull the arrow out! We got the boat turned around and finally were able to get another arrow in him and it was a good thing because I only had one barb in him... how it didn't pull out is sheer luck. My friend popped him in the head with his 22 caliber pistol and the celebration began! Whooping and hollering and high fiving lol

In true Cajun style I cleaned it and made gar balls. Talk about some good stuff!

Well I never follow a recipe lol
Nothing is measured so I'll give you the ingredients and just go from there. I cleaned my gar and cut all the red blood line and fat off. If you plan to freeze the balls they say it's best to boil the meat. So I boiled it for about 10 minutes then drained.
Next I ground the gar, then I ground my vegetables. Onions, bell pepper, green onion, celery and garlic. I added salt, black pepper and Tony's Creole Seasoning. Again nothing measured....
The meat is dry and fluffy so I added a few cups of water and a dozen of eggs to moisten it up so it would form into balls. I mixed all this together real well.
I formed into a ball, dipped in an egg batter then rolled the balls in fish fry but you can use corn meal as well.
Deep fry and sample a couple before making all the balls to test to see if they are seasoned to your liking.
You can make them into patties as well and pan fry. I was going to add pics of the process but Photobucket is acting up again and won't give me the img code.
