Another jerky recipe

This is tilted toward sweet, with lemon undertones and a bit of a heat finish. (OMG, that sounds like a wine tasting)

Proportion to allow for whatever amount of meat to be covered by liquid.

1/2 cup maple syrup. Real versions are better than pretend.

Liquid smoke don't go crazy less is more

1-2 cups cheap red wine the redder the better, or beer.

1 can semi sweet carbonated lemon drink- don't go too sweet.

1/4 cup good vinegar

Smoked, ground or finely chopped chipotle peppers and or paste. (I use Tio Pelongs salsito especial) but any good paste type version will work.


Mix well ingredients and submerse jerky. I use a plastic or glass container that concentrates liquid as to be certain to cover slices. Marinade over night and then place in dehydrator.
