That is one heck of a lot of practice.  It takes me about four times that long, and he gets a lot more meat off than I do...

WOW, SUPERSTAR.  I'm a meat cutter with 36 years experience and I have never seen a person do what he did so expertly and fast. NICE JOB .

X2 and I might add: I always attempt this with 2 or 3 moderately sharp pocket knives and 2 or 3 moderately irritating children under-foot.

Cool video. That guy is at home with a knife! My dad was a butcher and I used to watch him work like that. It's in knowing where to make the cuts, how to hold the knife (that's both a safety issue and speed issue) and knife sharpness. My dad used to say "it's easy, you just follow the lines." Yeah, right. way easier said than done.

But that small boning hook. I've never seen that before. Cool. Gonna get one of those.

Man I can only do that in 10 minutes, how'd he cut off 2 minutes?    :jumper:   Ok maybe takes me a few hours. I'd like to have him in my camp!
