Title: African Fry Bread "Vetkoek"

Here's a nice easy one for those that feel like trying a different type of camp bread.

This goes good with just about anything but best with a good Game stew or venison chili
 and then Butter and Apricot jam for Something sweet afterwards.

give it a try

you need

    * 2 cups Water lukewarm
    * 2 teaspoon Sugar
    * 2 teaspoon Yeast (one little sachet)
    * 5 cups Flour
    * 2 teaspoon Salt
    * 2 tablespoon Oil

1. Stir sugar in the lukewarm water and add the yeast.

2. Sieve the flour and salt into a mixing bowl.

3. Add oil to the yeast liquid.

4. Mix dry ingredients with yeast liquid using a wooden spoon.

5. Work to a firm dough, adding extra flour if needed, until sides of bowl are clean.

6. Turn dough on to a lightly floured table and knead thouroughly until it is firm, elastic and no longer sticky (about 10 minutes).

7. Shape dough into a ball and place into mixing bowl and cover with cloth.

8. Allow dough to double in size and dough springs back when pressed with a floured finger (60 minutes in a warm place, 2 hours at room temperature).

9. Turn risen dough onto a lightly floured surface, flatten to knock out air bubbles and knead to make firm. Flatten to about a little less than inch and pat out into pieces about 3x3"

10. Cook in hot Veg oil until brown, turning occasionally  (drop in a small piece it will float if the oil is hot enough. you dont want it too hot. I use a dutch oven

11. Slice open and smear with butter and enjoy with your favorite Deer or hog Stew or chilli

Andy, man!

I know you’re not gonna believe this, but I grew up eating that very kind of thing! Ours is a little flatter, maybe less yeast, but the same thing.

It's as traditional as moccasins and cornstalk shoots around here. My favorite is to make a pot of beans on Monday then put them in the fridge till Tuesday (over night in the fridge and the Magic Food Fairies make them super thick). Heat them up and make the bread. Reach in and pull the middle out, then fill full of beans. Sprinkle with some browned venison burger and top with diced tomatoes, onion and cheese. THAT is an Indian taco!

Great recipe, isn't it neat how good food, is good food where ever you’re from?

Hey Keith, ya its very similar to some Indian Fry breads, it is like you said quite a bit thicker as is it not rolled out as flat before cooking.

The beans, venison, tomatoes, cheese and onion sounds awesome bet it would work great with these.

Good point as well about leaving the beans over night in the fridge, i do that (if i have the time) with currys, chilli or stew cook it up let it cool leave it in the fridge overnight then reheat the next day, it always tastes better.

Like OKKeith said, I've been making these for years and stuffing them with just about anything! Makes a complete meal in a convenient package with minimum clean-up. Really great stuffed with pulled pork!
